Atonement for the holidays – carrot and coriander soup

Oh my goodness, please tell me that I’m not the only one to be feeling ever so slightly gross after the holiday period.  Too much good eating, too much champagne, too much sitting around, too much ..ahem.. blogging.

So, armed with multiple noble resolutions, walking boots and a new subscription to the local gym, I am also initiating the family into the joys of vegetable soups – a lot of vegetable soups.   And here for you my friends, is our favourite one so far.

To make enough carrot and coriander soup for 4 people you will need:

Lightly cook the onions in the oil, add the peeled and sliced carrots, along with the ground coriander and ginger.  I like to add crushed coriander seeds too at this point.

When the vegetables are softened, pour in the hot stock, and add the salt and pepper.  Cut up most of the fresh coriander and drop into the sauce.   Cook for about 25 minutes until the vegetables are completely soft, then blend until smooth.   To serve cut the remaining coriander leaves and sprinkle a little over each plate.

I’d love to say that with this you’ll also enjoy a fresh baguette and some delicious fresh butter, and a nice dollop of cream in each bowl … but I won’t.

Some resolutions just have to be stuck to …….. at least until I can get back into my jeans without feeling faint!

Perhaps a small baguette with a tiny bit of butter and half a dollop of sour cream, sorry I can’t help myself. Hi Sharon well over on this side of the world it was a tad hot, so you just can’t enjoy the food like you lucky people do over the festive season. Hi Heather,

How is Arles’ weather?
One of my favorite places visited in France.
It must be lovely at Christmas.

Is there a shop selling Santon’s dressed in cloth in Arles?
I have an elderly lady carrying a bread basket complete with the baguette on the desk in my living room. I think she needs a friend.

A friend knows this and gave me a pair of “Starry Night” patterned socks for Christmas.

With temperatures below freezing, soups are very appropriate here in New England. I love the addition of the fresh coriander…it musts add a lot of flavor to your soup. I like the idea of jeans that aren’t tight so bring on more delicious ideas.

I’m longing for vegetables after the holidays-my son in low started vegan eating in november – so this is the right time (short days long darkness haze outside) to experiment in the kitchen. Oh my! Did this come at a perfect time! You say you feel faint in your jeans…well, right now I’m in pain and feel oxygen deprived in mine! I can’t wait to feel comfort around the waistline again!! lol Thanks for sharing your delicious looking and calorie conscious soup!

This soup sounds wonderful.
I think even I could make it(not a great cook).
Had soup tonight..a healthy no salt pea soup.Fat free and low calorie.
Would have a soup meal every night this time of year but that might not be fair to my husband.(He loves soup as well but not every night as the main meal)We had a balmy 25 degree Farenheit day versus our week of 10 degrees or less in NJ.

I know the feeling! Too much bulk around the middle! I’ll be making all of your veggie soups! It’s kind of cold here, 50’s F. in the evenings and mornings! Cold for us! Soups are perfect!

Coriander is one of my favorite spices. It is one of the ingredients of my favorite squash soup. Although I make a delightful carrot soup very similar to this one but with thyme, I am definitely going to try your recipe next. Thanks for posting.
