I’ve been finding beautiful old madeleine baking moulds for the store, and it’s filled me with a longing for sweet buttery madeleine cakes.
If you haven’t tried these, you may like to attempt this recipe that I have found very successfull
- 2/3 cup sugar
- 1
- 1/2 teaspoon grated lemon peel
- Pinch of salt
- 1 cup all purpose flour
- 10 tablespoons (1 1/4 sticks) unsalted butter, melted, cooled slightl
- Powdered sugar
Preheat oven to 375°F. Generously butter and flour the baking tin, especially designed for madeleines. Using a mixer, beat eggs and 2/3 cup sugar in a large bowl. Beat in vanilla, lemon peel and salt. Add flour; beat just until blended. Gradually add cooled melted butter in steady stream, beating just until blended.
Spoon 1 tablespoon batter into each indentation in pan. Bake until puffed and brown, about 16 minutes. Cool 5 minutes. Gently remove from pan. Repeat process, buttering and flouring pan before each batch. (Can be made 1 day ahead.)
Dust madeleines with powdered sugar.

Today I saw your Madeleine recipe. I had the pan, so thought why not?
So I just made the first pan and they are delicious.
I have eaten half of the first pan already. I think it makes 12, oh my goodness. The second pan is in the oven now. So thought I would just come in here and thank you for the recipe.
The molds are pretty, such a delicate shape to the Madelaine's. And just reading the recipe make me yearn to sit on the porch and enjoy some now with coffee.
Oh Sharon, you really must stop! Every time you post a recipe, I feel the need to try it! So…now…once again…because of you…I have to go buy something for the kitchen. As in Madeliene pan.
I will try them Sharon. Mine always seem to come out with variations between each batch. I think the lemon would give them a lovely twist.

Today I am going in search of madeleine pans and I am going to make after all it is Bastille day on Thursday.
I just made chocolate madeleines myself, they turned out delicious. I will have to try your recipe the next time. They frequently sell the pans at Marshalls and TJMaxx.

For a different look/taste try dipping one end in chocolate Allow to cool on rack . perfect homage to Napoleon.
