Few edibles can be more traditionally Parisian than an “oeuf mayo”, – hard boiled egg served with a dollop of mayonnaise. So easy, so straight forward but divine when it’s just right.
For ever, Paris bars have a had a little ‘presentoir’of eggs, complete with the salt. Clients take an egg, roll it on the zinc-topped bar counter and peel directly, sprinkle with a little salt and in two gulps it’s gone! In today’s super-safe, Ă»ber-worried world, health and safety experts fret about salmonella and bacteria, but I think life is too short for that!
So here is my ode to a good oeuf mayo, along with the simplest recipe for a proper home made mayonnaise, which of course is so much better than shop bought.
If you want to be parisian, then put a few eggs on to boil, and while they are cooking …
 make your mayonnaise … simply take the yolk of an egg,
mix it in a bowl with a teaspoon of Dijon mustard , some salt and pepper
start drizzling oil into the bowl, mixing it well after each dose (sunflower seed, vegetable oil, whatever, best not olive oil though, the flavour will be too strong)
as you put more and more oil into the mixture it will become paler and firmer.
Keep beating all the time. You can use a whisk for this, I just use a spoon
When your eggs are hard boiled, cool them in water and peel, serve your eggs with the mayonnaise, fresh bread and a little parsley

I visited Santiago, Chile on business many years ago and had homemade mayo made with eggs from corn fed chickens. So rich, so delicious. It was memorable, thanks for bringing my tastebuds back there.

I love this snack but never ate it before being here. Last weekend, a friend of mine was making mayo and I was watching and learning. She was astounded that I'd never made it before. I told her how "scary" raw eggs have become in the states. She rolled her eyes, made a french noise and went on with her task. We ate the mayo with crevettes and as ever, it was delicious.

I always make our mayo but I just do it in the blender on low since my arm gets tired of beating. It's great to use for aioli of different types as well. The egg snack sounds good and easy.

My mouth is watering! I've been a vegetarian for a long time and don't eat many eggs, but my whole body woke up in craving for this. Must be time for some protein.

I never used a blender for years and thought it sacrilegious to finally dump everything in the Cuisinart and make instant mayo !
It sure saves the arm with all that whisking you don't have to do , just drizzle in the oil .. voila ! mayonnaise.
Being married to a Dutchman means a good mayo is of primary importance, especially with French fries. I'm going to surprise him and fix this mayo!
As far as mayo with eggs, I'll pass and just eat my eggs plain, which I love. I'll save my fat and calories for the chocolate. ;]
